Bob’s Red Mill Polenta

Last night I tried Bob’s Red Mill Polenta and I can wholeheartedly recommend it. It was really easy to make and totally delicious and without the cheese, 100% vegan. I roasted some shallots and small whole tomatoes (with the skin on) in the oven and sauteed garlic and broccoli rabe in a pan while it cooked and combined in bowls. When pierced with a fork the tomatoes released their juices into the dish with the polenta and broccoli making a light sauce. Sorry no pics, we were all too busy eating, but Bob’s Red Mill Polenta will become a staple from here on out. 100x better than the precooked store-bought “logs” you can buy and the same amount of effort.
